This Due Cigni Hakucho gyuto 17.5 cm is an average-sized knife that is mostly used to finely cut meat and vegetables. Gyuto stands for 'Beef sword'. When preparing vegetables you use the knife by making a chopping movement near the heel of the knife. Use the tip to create a fine cut. When cutting (large) pieces of meat you allow the edge to cut through the meat with one single movement.
