This Due Cigni Hakucho sashimi 25 cm is, as the name might already suggest, great when cutting fish for sushi. Because of the one-sided grind you can - with some experience - quickly end up with wafer-thin slices of fish. After all, the Japanese steel is thicker than European steel. As such you can create a sharper fold and a sharper edge. You can use a smaller sharpening angle. If you do the same with steel that is less hard, the edge can break. This one-sided grind, however, has also ensured that this sashimi knife is mostly suited for right-handed chefs.
