The Benchmade Saddle Mountain Skinner is a slim, all-round hunting knife. It will cut through meat like a laser. The large 'belly' of the edge also makes this a great knife when gutting game. With your index finger on the jimping on the spine of the blade, you have a lot of control over the knife as you use it.

This is as close as it gets to a perfect fixed blade knife. Super light and elegant in the hand. Have always found EDC brand knives lacking in terms of slicing ability and ease of sharpening compared to Japanese kitchen knives. The 15002 is a great compromise for someone who wants an outdoor knife with some great protein processing or food preparation capabilities. Couldn’t recommend highly enough.
