The **Edge-On-Up PT50A** is the showpiece of the Edge-On-Up sharpness testers. Want to know if your kitchen knives need to be sharpened? Want to learn more about the state of your extensive knife collection? Or do you want to know if sharpening actually made your knife sharper? This sharpness tester shows, with an increase of 1 grams, the pressure needed to cut through a test medium.

Compared to other sharpness testers this Edge-On-Up PT50A has a better sensor and a faster processor to measure the sharpness of your knives even more accurately!  ### How does the Edge-On-Up sharpness tester work?

 The Edge-On-Up sharpness tester scientifically measures the sharpness of your knives. The holder contains a certified synthetic wire. You gently push your knife against this wire. The scale underneath the holder measures the applied pressure until the wire is cut. That is your test result. The pressure in grams is the value on the BESS (Brubacher Edge Sharpness Scale) C-scale. This BESS value is the final test result. The sharper the knife, the less weight you need, the lower the BESS value. A lower score is therefore sharper than a higher score. As such you have a scientific value for the sharpness of your knife. You never have to guess again or stick to terms as 'razor-sharp'. You have a concrete numerical value that allows to you even compare the sharpness.

 ### What is the BESS standard?

 The standard used to determine the sharpness of knives is called the BESS: Brubacher Edge Sharpness Scale. This scale was developed by Mike Brubacher, owner of Edge-On-Up. He has a background in sense and test development in various industries. In 2012 he started developing a standard that could measure the sharpness of knives and needles. The result is the BESS standard that was quickly adopted by experts and enthusiasts as one of the most user-friendly methods to determine the sharpness of a knife.

 Because a number doesn't say a lot without context a table was set up to make sure you can see how the score relates to the total scale. From 2000 BESS of an unsharpened knife to 0 BESS: ultimate sharpness. There will be few knives that will come close to the 0 BESS. A double-sided sharpened razor, a really, really sharp knife, ends up around 50 BESS.

 Because you cut through a thin wire it is true that you only measure a small part of the edge. That is why we recommend measuring the edge in three places: at the tip, in the middle and at the heel of the edge. Based on these three numbers you can end up with a weighted average by adding the three values and dividing them by three.

Wanted one of these for a while after seeing them online. Taken my sharpening up a notch as can experiment trying different things out. Worth having a good read of the instructions and watching some videos before you use it.
