Hand-forged Japanese paring knife with a blade length measuring 10 cm from the Eden Susumi series.

Hand-forged Japanese paring knife with a blade length of 10 cm from the Eden Susumi collection. Eden Kanso Susumi knives are thin and razor-sharp. The SG2 powder steel is stainless and, with a hardness of 62-63 HRC, rock-solid. Next to that the side of the steel is also considerably harder than is common for damascus steel. This means that the side of the knife is much better protected from scratches.

## Nice SG2 steel blade

The blade of this knife is made from SG2 powder steel, hence the name. This is a type of steel with a very fine structure and a hardness of 62-63 HRC. Because of this hardness you can sharpen the Susumi knives extremely thin. The knives are corrosion resistant and the damascus steel has the same hardness as the SG2 core. The knives are more scratch-resistant than most knives made from damascus.

## Traditional red sandalwood handle

The handles are made from red sandalwood, a type of rosewood. Perfect for a Japanese knife such as this. The handle has a traditional Japanese D-shape. As such the knife feels comfortable in hand. Because of the asymmetric design, however, this knife is suited for right-handed use. 

## Sharpening Eden Susumi kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

Mooi afgewerkt mes ,en blijft lang scherp.

This is an excellent pairing knife of which I own both the 10cm & 13cm versions, they both look stunning, fit very comfortably in my hand when in use and only require a gentle swipe over a ceramic rod to acquire and maintain a razor sharp long lasting edge. Highly recommend

Tolles kleines Officemesser. Die Klinge ist wirklich super! Sehr scharf, sehr dünn, stabiler Rücken, guter Curve und etwas rohe Optik.

Der Griff hingegen liegt mir mit dieser Kastanienform nicht so gut in der Hand. Ein Officemesser greift man ja unterschiedlich, je nach Aufgabe (schälen, schnitzen, schneiden, schnibbeln), da passt diese Form nicht immer.
