The **Eden Kanso Aogami Santoku knife** is a versatile Asian kitchen knife you can use to cut meat, vegetables and fish. A great alternative for the chef’s knife as it is lighter and easier to use. Cutting, crushing and scooping, the multifunctional Santoku can do it all!


This hand-forged Japanese Chef’s knife with 18.5 cm long blade is made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with small amounts of chrome and tungsten. This does mean that this type of steel is not as traditional as white paper steel. It does, however, improve the properties of the steel. Blue Paper Steel is better equipped against corrosion and chipping than White Paper Steel, even though it is definitely not a stainless type of steel.


The classic Japanese handle of the red sandalwood is asymmetrical and, as such, feels great in hand.

## Sharpening Eden Kanso Aogami kitchen knives

Do not sharpen these knives with a pull-through sharpener. Because of the hardness of the steel and the sideways movements that are made with a pull-through sharpener pieces of the edge can break off. That is why we recommend sharpening these knives by hand on a sharpening stone, sharpening steel or with a sharpening system.

Zeer fijn, scherp en lichtgewicht mes! Let wel op want het lemmet is zeer dun en het staal ook zeer hard. Mijn mes heeft dus ook een chip opgelopen maar de mannen van Knives and Tools hebben dit perfect opgelost! Hun service is uitstekend en zeer snel!

Magnifique couteau japonais  d un pouvoir de coupe dingue,  grande finesse de lame avec un tranchant qui dure dû à ses 63 hrc,  il peut donc être affûté sur des grains très fin . Couteau que l on essuie à  l usage  , tranchant qui se patine .... Je le recommande à 100 % Si je le pouvais  , j aurais acheté toute la gamme ^^.

Ongelofelijk mes voor deze prijs. Dit is het scherpste mes in mijn bezit. Hij glijdt door elke groente met een enorme precisie. Een plezier om mee te werken. Ik heb een dubbel zo duur mes (Myabi 6000 MCT) en deze Eden is zelfs nog een tikkeltje scherper. Snijdt ook een pak beter dan Global. 
Hij blijft ook heel lang zijn scherpheid behouden. Hij zou makkelijk te slijpen zijn. Dit heb ik nog niet geprobeerd. Alvast makkelijk te wetten met een keramische staaf. 
Tenslotte is het mes verrassend licht en wendbaar, maar toch gewichtig genoeg om controle te behouden. 
Het is scherp over de hele lengte van het lemmet, dus opletten dat je niet fout grijpt naar het mes, de snee in je vinger is onmiddellijk diep...

Nadelen:
- Hij gaat onmiddellijk roesten, dus telkens afdrogen als je hem 10 minuten niet gebruikt. 
- in tegenstelling tot het filmpje van knivesandtools heeft hij wel een geurtje en geeft hij een minimaal beetje smaak af aan de groenten als je er lang mee werkt en te veel pauzes neemt tussen groenten. Ik was hem nu telkens heel kort onder water tussen twee pauzes door, dan is alle geur weg. 
- het handvat is goedkoop, het is houd, maar het is alsof het ondergedompeld is in plastic. Zo gaat dit hout zeker super lang mee, maar het voelt goedkoop aan. 

Deze nadelen wegen echter totaal niet op tegen de snijkwaliteiten van dit mes en het plezier om ermee te werken. Hij is ook prachtig om naar te kijken. Ruwe eenvoud.
