Hand-forged Japanese paring knife with a  blade length of 10 cm from the Eden Kanso Aogami series. Features a handle that is specially designed for left-handed users.

This **Eden Aogami paring knife** is a lightweight, compact knife for the precise cutting tasks. Because of the compact size the knife feels great in hand. The blade and handle are perfectly balanced. As such you have a lot of control over the knife.

This 10 cm Japanese paring knife was forged by hand and made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type. The knife will quickly form a patina. This is an oxidation layer that protects the knife from rust. You can recognize a patina by the discolouration of the surface of the blade. The classic red sandal wood handle is asymmetrical. As such it feels great in hand. The shape of the handle is perfect for left-handed use. This doesn't mean, however that it cannot be used by right-handed users. I will only be a little less comfortable to use.

## Sharpening Eden Kanso Aogami kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

Optisch entspricht das Messer genau meinen Vorstellungen: einfache Verarbeitung, sieht aus, wie frisch aus der  glühenden Kohle, gezogen; die Schweißperlen des Schmiedes kleben noch an der Klinge...
... Leider auch sein Geruch. Die Klinge riecht auch nach wiederholtem waschen mit Lauge irgendwie ölig-metallisch, was sich aber zum Glück nicht im Geschmack widerspiegelt.

 Rost ist bisher kein Thema. Allerdings trockne ich die Klinge nach Benutzung sofort gründlich ab. Es beginnt sich bereits nach wenigen Benutzungen eine Patina zu bilden, welche die Klinge zusätzlich vor Rost schützen sollte.

Die Schneide selbst ist unglaublich scharf und definitiv schärfer als dreimal so teure rostfreie Damastmesser. Allerdings ist der Rücken recht breit, und in Verbindung mit der rauen Oberfläche des Klingenblattes gleitet das Messer schlechter durch hartes Gemüse, wie zB Zwiebeln, als es polierte Messer mit schmalen Rücken tun.

Die Linkshänder und Rechtshänder-Versionen unterscheiden sich nur durch die Griff-Form wobei gefühlt mit der linkshänder-Version auch jeder Rechtshänder bestens zurechtkommen wird.

Wer gerne mal Erfahrungen mit Carbonstahl-Messern sammeln möchte, dem ist dieses Messer wärmstens zu empfehlen. Wer einfach nur Dinge schneiden möchte sollte lieber zu etwas pflegeleichten greifen.
