I looked at every make of Damascus steel Santokus on the market available in the UK and the Eden knives are by far and away the best of the lot for value, performance and style. I spent 6 days looking, found Eden on the 5th day, and it didn't take long to confirm I was doing the right thing. Brilliant for fish and vegetables. Tall enough to not risk your knuckles when you're using them as a guide to chop at speed.
