The **Yaxell Zen filleting knife** is a very long and stylish Japanese filleting knife. Great when cutting meat or sushi. The long blade enables you to make long cuts. Slices won't stick to the low blade. As such you can easily cut thin slices without tearing them. The sharp tip is perfect for small, delicate tasks such as removing tendons or fat.

## Yaxell Zen blade

The blade is made from 37 layers of damascus steel and a core of Japanese VG10 steel hardened up to 61HRC. VG10 is known to be very hard and can also easily be sharpened. The hammered effect on the blade is a traditional finish that emerged because of the blows of the blacksmith's hammer as he forged the blade. In addition to it looking great, the dimples ensure that food won't stick to the blade. The damascus steel is in nice contrast with the dark and light lines that run over the entire length of the blade. This combination of the type of steel and the finish ensures that the Yaxell Zen knives are efficient, but also look amazing.

## Yaxell Zen handle

The handles are made from micarta. Micarta is a material comprised of linen, impregnated with an epoxy resin. As such the material is very strong. It can handle its own and withstand water. Micarta is known to offer a lot of grip. Even if it is wet. The oval and round shape of the handle provides you with enough grip, making it very comfortable to use.
