The **Wüsthof Classic Ikon salmon knife 32 cm** is truly the cream of the crop when it comes to top-quality salmon knives. The long blade ensures that you can cut thin slices of fish in one single movement. The low blade and the dimples ensure that the thin slices of salmon don't tear because they stick to the blade.

## The blade


Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.


Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.


## The handle


The handle is made from rock-solid POM. This is a shock, heat and acid proof material you can easily clean. Perfect for kitchen knives. The steel of the blade seamlessly merges with the handle. This is not only a rock-solid connection, it also provides great balance. Combined with the ergonomic shape this knife feels amazing in hand.

Working in a professional kitchen, we have a dish in the menu wich is cured salmon. I had a victorinox salmon knife before and i could get out of a whole fillet nearly half of the portions i can get now with my new wusthof. I am able to slice super thin slices. Highly reccomended.

Please note that knives are almost always sharpened by hand, even in factories. This value is therefore only an indication of a single tool measured by us.
