The **Wüsthof Classic boning knife 10 cm** is perfect when
removing bones, removing the skin from meat or fish
and removing muscles and fat. Because the blade
is somewhat flexible you can cut really precisely. Filleting fish or
meat has never been this easy. Suitable for the smaller
pieces of meat and perfect when a large knife won't get the job done.

## Wüsthof Classic blade: razor-sharp stainless steel


The blade made from chromium-vanadium steel (X50CrMoV15) is forged from one solid piece of steel. It is sharpened according to Wüsthof’s PEtec technology. This means that for each blade a sharpening angle is determined with the help of a computer. Afterwards it is precisely sharpened on a wet sharpening stone. After thorough inspection each knife leaves the production line, ready for a life of intensive use.


Wüsthof processes the steel in a specific way to make sure it has a high hardness of 58 Rockwell. As such the knife retains its sharpness for a really long time. However, if you notice that the knife is not as sharp as it used to be, all you have to do is move it over a honing steel. The result is a razor-sharp knife that is amazing to use.


## Wüsthof Classic handle: sustainable and hygienic


This knife is a combination of a forged blade and an ergonomic handle made from black POM, a very sustainable type of plastic. The handle can withstand all substances you find in the kitchen. The handle was traditionally and seamlessly riveted to the blade with three rivets. As such dirt can never accumulate in between the blade and the handle. The crop protects your fingers from unnecessary contact with the edge. What more could you possibly ask for?


## Wüsthof Classic: the classic Wüsthof collection


The Classic is the most extensive Wüsthof collection on the market today. It is comprised of over 80 different kitchen knives, amongst which different sizes of chef’s knives, bread knives and carving knives. Because this collection has the most versions of all possible knives, you can easily comprise your own perfect knife set. A knife set with a knife block of chef’s case is, of course, also an option.

Een uitbeenmes dat uitstekend aan de verwachtingen voldoet en hier al succesvol gebruikt is om wild te onthuiden en het vlees van de botten te scheiden. Ik gebruik deze 10cm versie voor kleinwild wat mij de bestaansreden van dit kleinere uitbeenmes lijkt. Voor grofwild ga je beter af zijn met de versies van 14 of 16cm.

Ik had de mes liever nog een fractie flexibeler gehad, maar het is wat het is. Een degelijke uitbeenmes. Lengte van 10cm voldoet voor de keuken thuis. Tenzij u veel met grote dieren werkt. Dan kunt u beter nog een uitbeenmes erbij kopen.
