Full description
As German knives manufacturer Wüsthof has ventured to making a typical Japanese knife: the Yanagiba. Yanagiba is Japanese for ' Willow leaf '. This knife is designed for cutting fish and sushi. The long blade cuts fast through large pieces of fish. The blade has one straight and one hypotenuse. The unilateral cut is usually only applied to Japanese knives, but now also by Wusthof. With this knife you cut almost perpendicular to the cutting board. After a bit of practice, you can cut paper-thin slices.

Ideal for cutting raw fish or meat, very sharp blade. The bamboo protector is useful as I don’t have space in my wooden knife block for another large knife, and the blade definitely needs protecting..
