This Eden Takara Nakiri is an ideal vegetable knife in Japanese style. In Japan the nakiri is used for very precise cutting of vegetables. The edge barely runs up to the tip. Yet the point somewhat rounded so the knife still rolls over the cutting board. By the superior cutting properties this knife is a joy to work with and a beauty to look at.
